Coconut Flour vs. Gluten
In my personal opinion, the most important aspect of the
use of coconut flour is not what you get from using it, but what you don’t get
from using the ‘normal’ flours we’ve all become used to, namely, wheat.

These and other similar ailments are often
not singularly exclusive, but often, problems arising from the consumption of
gluten can be misdiagnosed as having stemmed from other origins, and therefore
the problem persists or is even aggravated by the continuation of the use of
gluten.
We have been told for decades that whole
grains are practically the ‘holy grail’ of good eating, but the truth is, as a
species we’ve only been consuming in mass quantities since the advent of the
mill, about five hundred years ago. Whereas we’ve been eating animal proteins,
vegetables, fruits, and nuts for our entire history, this recent development of
eating grains has been so proliferous into our daily diet, it’s really no
wonder why our bodies are not tolerating it.
In the Far East, people have been cultivating
grains for mass consumption for thousands of years. Since this was one of the
very first food sources that could be controlled by people, instead of relying
on Mother Nature to supply enough food, it obviously became a very important
development in food supplies. As well, the ease with which it was grown,
stored, and transported made it a very good source of trade for areas not able
to take advantage of it.
By the 19th century, technological advances in
agriculture, storage, and transportation of perishable products allowed the
spread of gluten-based crops to all corners of the globe. In the 20th century, the USDA made grains part of the
food pyramid, not only permeating the mass consumption of the crop by the
American people, but fattening the economic health of the country because of
the vast farmland across the nation devoted to its growth.
Recent research has postulated the emergence
and growing frequency of celiac disease is directly tied to the consumption of
grains, starting with the Romans, whereas the cultures with little or no gluten
in their diets reveal little to no instances of celiac disease, nor much of its
proven resulting health issues. Adversely, those peoples around the world with
the least exposure to gluten, upon consumption, result in the highest instances
of resulting health issues proven to be associated with gluten.
Now, in modern times, not only have we been
consuming gluten for generations (scientists are proving the medical equivalent
of ‘the sins of the father are visited upon the son’), but with the increasing
alteration of our crops into GMO (genetically modified organisms), crops like
wheat, barley, oats, etc. are more glutinous than ever, creating problems in
those that consume it even faster and to a much higher severity of the
resulting symptoms. As well, the media is constant in its efforts to convince
the public of the supposed benefits of grains, with no warning as to the true
effects of its consumption.
Obviously, any media outlet that is paid for
its work will be concerned more for its bottom-line than for the effects its
advertisements will have on your overall health.
The truth
is celiac disease is quickly becoming one of the most common autoimmune
diseases in our gluten-based society, and yet, very few people even know of its
existence. Remember, your doctor gets most of his ‘up to date’ information from
the medical reports of the pharmaceutical companies, and your poor health is ALWAYS in their best
interest. Given the long list of ailments gluten consumption
can cause, it’s no wonder they don’t want to admit the benefits of a
gluten-free lifestyle. If the American people were to suddenly adopt an
attitude of healthier living in this way, the blow to the economy would be, at
least temporarily, devastating.
However, be that as it may, your
responsibility is to your own health and that of your family’s. With that in
mind, please educate yourself further as to proper dietary options. Not only
will it benefit you and your loved ones, in the long run, the economy will have
to replace its present crops for those the public demands. We just have to know
what those future crops should be.
